However, it can be restricting for some people due to the recipe being full of gluten and dairy. This can be very frustrating because everyone wants to be able to enjoy their favorite meals. The traditional fettuccine alfredo, made in the early 1900s, features fettuccine noodles tossed with butter and parmesan cheese. Later on, people started to add cream, broccoli, garlic, and meats to the recipe. Some versions of Alfredo sauce are thickened with eggs or starch. Gluten-Free Recipe

Ingredients (6 servings)
- 9-12 oz of gluten-free fettuccine noodles
- ½ cup butter
- 16 oz of heavy cream
- 2 minced garlic cloves
- ¼ teaspoon cracked black pepper
- 1 cup of freshly grated parmesan cheese
Instructions
- In one pot, cook the noodles in boiling salted water according to package directions.
- In a large skillet, melt the butter over medium heat.
- Add minced garlic and sauté for about one minute.
- Stir in the heavy cream and bring to a simmer.
- Turn heat to medium-low and continue to simmer the heavy cream for 5 minutes.
- Reduce heat to low and gradually whisk the parmesan cheese into the mixture until smooth.
- Season with pepper and salt (if needed).
- Add the cooked pasta to the Alfredo sauce. Toss gently to combine.
- Stir in a little pasta water as needed to thin the sauce.
- Garnish with chopped Italian parsley, if desired.

- 8 oz fettuccine noodles
- ¼ cup of olive oil
- 2 tablespoons of all purpose flour
- 2 ¼ cups of soy milk
- 3 tablespoons of thyme
- Salt and pepper to taste
Instructions
- In one pot, cook the noodles in boiling salted water according to package directions.
- In a small saucepan, heat the oil over medium to low heat.
- Add flour and cook for about 2 minutes, stirring constantly until smooth.
- Continuing to stir, add soy milk and thyme and bring to a simmer for about 4-5 minutes.
- Add salt and pepper to taste.
- Add to fettuccine and mix in.
