A new Denver bakery is doing something beautifully different. 

Denver Macaron is redefining the classic macaron with a modern and plant-based twist: every delicious bite is vegan, gluten-free, and made with potato protein instead of egg whites. Don’t fret, the potato actually makes the macarons a bit fluffier than normal, with less chewiness, more airiness, and still full-flavored delight. 

This new design was founded by Jamie Picasarri, whose passion for baking encouraged her to make her favorite dessert into something her vegan friends could also enjoy. “My husband calls it the macaron massacre because I’ve been through so many, so much. A year of just testing them,” Jamie says. 

That’s when Jamie met pastry chef Nikki Finley. According to her, they both needed someone part-time, and after three months working together, Nikki decided to join Denver Macaron full time around a year ago. Now, she is the pastry chef, as well as the one in charge of finances, operations, and running inventory. 

The two spent months searching for their own space, and in February they found their kitchen. Located on Lincoln Street in Denver, the pink entrance is inviting, opening to the yummy smells of macarons and desserts while you’re greeted with smiling and friendly faces. 

“I think my favorite part is just, honestly, having something I love so much. I love this business. I love watching it grow,” Jamie says. “I love when people get excited.” 

Denver Macaron’s signature “All Natural” flavors are free from any artificial colors or flavors. Options of horchata, toasted coconut, pistachio, raspberry almond, cafe latte, and dark chocolate truffle make it hard to decide which to eat first. Not to mention the holiday box, which features fun and tasty flavors such as gingerbread, peppermint chocolate, banana walnut, and chocolate hazelnut. 

“We both learned so much about business and how to connect with different kinds of people. It’s so cool to have people come in the space to pick up orders, and we actually get to talk to the people that are eating our product and ordering it and reordering,” Nikki says. 

The company also creates elegant macaron towers and platters, colorful displays perfect for holiday gatherings for the kids and family members with allergies or who are vegan, or for corporate parties, weddings, or dessert tables. The 2025 Holiday Box comes with an even sweeter deal – 10% of every box sold goes directly to support the Denver Animal Shelter.

“When we get to see kids, it’s so fun for them to come up because they pick the flavors you would never expect. We had this nine-year-old boy that always came in and got the cafe latte. That’s so awesome,” Jamie says.
