Ash and Agave will officially open in Cherry Creek on April 5, 2026. The anticipated restaurant will introduce an immersive culinary journey inspired by the sun-soaked flavors, relaxed elegance, and vibrant energy of the Mexican Riviera.
The newest concept from Shucking Good Hospitality and Founder & President Sean Huggard, the restaurant is designed to feel like a coastal escape in the heart of Cherry Creek. Ash and Agave offers guests an atmosphere that transitions seamlessly from daytime brightness to a glowing golden-hour ambiance. The concept centers on wood-fired cooking, shareable plates, and an agave-forward cocktail program that encourages guests to settle in and stay awhile.
“Ash and Agave was designed to give a feeling from the moment guests walk through the door. We wanted a space where the lighting, music, cocktails, and food all work together to create something transportive,” said Huggard. “It is lively, warm, and built for connection, whether guests are joining us for dinner, drinks, or a long evening with friends. We are thrilled to bring this incredible concept to Cherry Creek.”
The restaurant’s design blends modern sophistication with coastal Mexican influences. Blue and aqua tiles bring movement and color throughout the space, while woven basket lighting casts a soft, golden glow. Lounge-style seating, tropical greenery, and layered textures with terrazzo finishes create an environment that feels polished yet relaxed, equally suited for celebratory dinners, date nights, and spontaneous cocktails.
Expect lunch and dinner menus that showcase bold coastal flavors and wood-fired techniques. Inspired by Mexico’s seaside markets and culinary traditions, the dishes emphasize fresh seafood, bright citrus, vibrant spices, and fire-kissed preparations. Signature share plates include Wood-Grilled Oysters, Chargrilled Octopus, Baja Style Mussels, and other highlights, alongside favorites like Queso Fundido, Al Pastor Skewers, and Sea Bass Ceviche. Guests can also build their own taco experience with mix-and-match options such as Gaucho, Spicy Shrimp, and Queso Birria. In keeping with Shucking Good Hospitality’s commitment to quality, shellfish is delivered from Blue Island Oyster Farm, the group’s own farm on Long Island. This direct sourcing ensures exceptional freshness and consistency year-round, a distinction that is truly unique in Denver.
Wood-fired grilled entrées include options like Salmon Limón, Pacific Sea Bass a la Veracruz, Beef Short Rib Barbacoa, and Rotisserie Chicken. The restaurant’s Carne Locker brings a refined approach to Mexican cuisine, featuring premium meats expertly prepared over a 900-degree fire. Signature offerings include the Presidente Cut Skirt Steak, Black Angus Ribeye, Lamb Rack, Gaucho Sausage, and the 24-ounce ‘El Rey’ Porterhouse, designed for sharing and indulgence.
Complementing the culinary program is a spirited beverage experience centered on tequila, mezcal, and agave-forward spirits. Signature cocktails include the Paloma Negra with reposado tequila, grapefruit, and Aperol; the Piña Brava with pineapple tequila, amaro, local honey, and lime; and La Solara, a mezcal-based cocktail brightened with passion fruit foam and champagne syrup. Guests can also enjoy an extensive tequila and mezcal collection, toasted coconut and seasonal fruit margaritas, cervezas, and curated Agave Flights highlighting the diversity, terroir, and craftsmanship of Mexico’s signature spirits. Non-alcoholic offerings include Aguas Frescas and a curated selection of Mexican Sodas, with classics like Mexican Coke and Banana Cola rounding out the experience.
