Sweet Potato Pancales Recipe

Sweet Potato Pancakes
Cook time: 15 minutes.
1 medium sweet potato or yam, washed
Pancake mix to serve 4 (choose any mix that meets your dietary
¾ cup raisins
¾ cup walnuts, chopped
2 bananas, sliced
2 tbsp. local honey for drizzling
Poke sweet potato several times with a fork. Place in a dish in the microwave and cook for 5 minutes, turning the sweet potato half way through. Sweet potato is done when it is soft to the touch. Set aside for a few minutes and let cool.
Meanwhile, prepare pancake mix as directed. Slice sweet potato in half and scoop out the insides, adding to the pancake mix. Smash it and incorporate it into the mix as you stir. The mixture doesn’t need to be completely smooth; some sweet potato chunks are just fine. The mixture will thicken, so add additional liquid as desired.
Grease a large skillet and heat to medium. Cook the pancakes so they’re browned on both sides and cooked through. Transfer to plates and top with bananas, raisins, walnuts and honey. Serves four.
Involve the Kids!
Let kids help by having them mash the sweet potato into the pancake mix. They’ll have fun stirring and watching the mixture turn orange. Let them be responsible for topping the pancakes with the bananas, raisins, walnuts and honey for each family member.
